Crunchy Avocado Bites

Well, one of my finds were these avocado bites.  My first batch I made to the recipe, and in all honesty, it kinda left me disappointed as it tasted like cardboard.  However… I made a few ‘tweaks’ and when I left them on the counter to cool, my husband had eaten the entire batch (well, all but 4, he’s so thoughtful):)

 

 

 

- 1/4 c Flour

-1 tsp salt

- 2 large eggs

- 1 1/4 c panko

- 2 avocados

- dash of garlic salt with parsley

- sprinkle of seasoned salt

- grated parmesan

DIRECTIONS:

* Preheat oven to 450

* mix garlic salt in the flour, separate into separate bowls: flour, lightly beaten egg, and panko

* cut avocado into bite size slices

* flour then generous coat of egg and generous coat of panko

* put on cookie tray and bake for 20 min each tray

* sprinkle with season salt and parmesan

* add dip (we used ranch).  would be great with a spicy chipotle mayo dip, tzatziki, or whatever your heart desires.  Enjoy!
